The baked cookies are less fragile than most ginger and sugar cookies, making them ideal for decorating. Scraps of the dough can be re-rolled several times with acceptable results.
Ingredients for Frosted Ginger Cookies
- 1 cup granulated sugar
- 1 cup light molasses
- 1 cup shortening
- 2/3 cup very hot water
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1/2 teaspoon salt
- 8 cups sifted all-purpose flour

Instructions for Making Frosted Ginger Cookies
- Preheat oven to 350° Fahrenheit
- Place sugar, shortening, hot water, and molasses in a very large bowl. An adult should pour the hot water.
- Use a wooden spoon to thoroughly cream sugar, shortening, water, and molasses.
- Let cool slightly and blend in eggs.
- Add dry ingredients and blend thoroughly. (Because this dough is thick and the volume is large, hand blending is recommended. Kids with well-washed hands may enjoy helping to mix the dough.)
- You may chill dough or use it immediately. (If you chill the dough, let it sit at room temperature for about half an hour before use or it will be too stiff to roll easily.)
- Take a 4-5 inch diameter ball of dough and place on a well-floured board.
- Roll the dough to approximately 1/4-inch thickness.
- Cut dough with cookie cutters.
- Bake cut-out cookies on a greased cookie sheet for 7-8 minutes at 350° Fahrenheit. (Make sure the cookie shapes on the sheet are similar in size to assure even baking.)
- Cool cookies slightly before removing from cookie sheet.
- Place on a metal rack to continue cooling.
- When cool, decorate with a frosting glaze (lemon flavored glaze works well) or decorator icing.
